Samenvatting:The byproducts of the industrialization of tropical fruits have been gaining importance in the food industry due to their dietary fiber content similar or greater than those of cereals. They have proven to be suitable for the production of food products due to their technological properties and their excellent functional properties, strongly related to dietary fiber composition. Recent studies have reported incorporating dietary fiber from tropical fruits and their byproducts to the diet through food products consumed daily such as bread, cookies, tortillas, and cakes and its health benefits. This review focuses on the knowledge of the last five years of the literature on the sources of dietary fiber of tropical fruits and their byproducts, in addition to their potential applications as functional ingredients in bakery, tortilla, and pasta products.
