Sumario:This research determined the effects of season and collection location on the physicochemical quality (instrumental color and proximal chemical analysis) and microbiological properties (mesophilic, psychrotrophic, and Staphylococcus aureus counts) of raw propolis, and the biological activity of propolis extracts. The total phenolic compounds (TPC) and total flavonoid content (TFC) were measured, and antioxidant activity was evaluated by the free-radical scavenging activity (FRSA) and reducing power ability (RPA). The antibacterial activity was determined against Gram-positive (S. aureus and Listeria monocytogenes) and Gram-negative bacteria (Escherichia coli and Salmonella typhimurium). The results showed that the physicochemical and microbiological properties of raw propolis complied with international quality standards. Propolis extracts collected during summer had the greatest effect against S. aureus, and the highest FRSA and RPA, likely because of also possessing the highest TPC and TFC among the extracts. In conclusion, the season and collection location affect the physicochemical properties of propolis, as well as the bioactivity of its extracts.
