A hypothetical-deductive method with descriptive-analytical scope was used where the food situation in the southeast of Mexico (Campeche, Chiapas, Tabasco and Yucatan) was studied through local legal instruments, in the same way reports from international organizations were examined. and statistics to build the relationship between poverty and health effects. The discussion focuses on the guarantee of food security through food as a human right, in turn, with the lack of protection of this, the right to health of people is violated. We conclude that poverty has an intrinsic relationship with food insecurity, which leads to determine that, at present, despite the efforts of international organizations to reduce the gap of human rights violations, in the Mexican State there are still pending countless actions for the due protection of the right to food. El presente artículo científico tiene como objetivo analizar la seguridad alimentaria como corolario del derecho humano a la alimentación a la luz del marco jurídico especializado nacional e internacional, así como su relación con la pobreza en México. Se empleó una método hipotético-deductivo con alcance descriptivo-analítico donde se estudió la situación de la alimentación en el sureste de México (Campeche, Chiapas, Tabasco y Yucatán) a través de instrumentos jurídicos locales, de igual forma se examinaron informes de organismos internacionales y estadísticos para construir la relación entre pobreza y afectación a la salud. La discusión se centra en la garantía de la seguridad alimentaria a través de la alimentación como derecho humano, a su vez, con la falta de protección de este, se violenta el derecho a la salud de las personas. Concluimos que la pobreza tiene una relación intrínseca con la inseguridad alimentaria, lo que conlleva a determinar que, en la actualidad, a pesar de los esfuerzos de organismos internacionales por la reducción de la brecha de violaciones a derechos humanos, en el Estado mexicano siguen pendientes un sinfín de acciones para la debida protección del derecho a la alimentación.
